My 3yo. loves the movie Ratatouille and over the last year and a half shes watched that movie more than I'd like to admit her watching it. It's taken me watching it over and over and over to finally become numb to the fact that there were rats in the kitchen. Now, I love it! And to celebrate how much I love it, I decided to finally make the token dish in the movie.
I can't tell you how delicious this was, you just have to take my word for it and make it for yourself.
1/2 onion
4 cloves garlic
1 red bell pepper, seeds and ribs removed
1 yellow bell pepper, seeds and ribs removed
2 Tablespoons olive oil
1 28 ounce can, crushed tomatoes
herbs of your choice (I used Oregano and Thyme)
salt and pepper
1 zucchini squash
1 yellow squash
4 Roma tomatoes
Preheat oven to 350 degrees. Place onion, garlic, and bell peppers in food processor and chop until pureed. Warm a skillet on medium heat, add olive oil. Saute pureed vegetables in skillet for 10 minutes. Add crushed tomatoes, herbs, salt, and pepper and let simmer for 20 minutes.
In the meantime switch out chop blade in the food processor for the slice blade. Slice zucchini, yellow squash, and tomato and place in separate bowls; set aside. After the 20 minutes is up, pour tomato sauce in a 2.5 quart baking dish.
Place sliced vegetables over the sauce alternating zucchini, yellow squash, and tomato. Top with a piece of parchment paper cut in the shape of baking dish so it will fit snugly inside. Bake for 2 hours. Serve over pasta, rice or potatoes... or all by itself, and a little Parmesan cheese, of course.
Yield: 4-8 servings

I love that movie too, and your sliced and baked version of ratatouille looks like the one in the movie. Cute!
It is funny how a movie can create a food craze. We have a new recipe in our family, too, it is for Ratatouille done in the slow cooker. Too yummy! (The movie was yummy, too!)
